The Skinniest Cocoa of Them All

Over the years my hot cocoa recipe has evolved. When I went vegan,  I swapped out the milk for non-dairy milk. That was pretty easy. Then I started sweetening it with stevia instead of sugar. That took a bit of getting used to, since the sweet of stevia isn’t quite like the sweet of sugar. Finally, I swapped out the non-dairy milk for peppermint tea...and created a beverage that I could drink a half gallon of for under 100 calories. It’s not creamy like traditional hot cocoa, but if you like dark chocolate, it’s definitely worth trying.

Allow me to introduce you to my 2016  NaNoWriMo beverage of choice:





Skinny Tea Cocoa

Yield: 2 cups

Ingredients:


  • 2 cups hot water or brewed tea (I like any kind of mint or Sugar Cookie Sleigh Ride)
  • 1 tablespoon unsweetened cocoa powder, or to taste (I like the natural for this better than the dutch processed kind)
  • 1/4 teaspoon vanilla extract (optional--good to add if you’re using hot water)
  • 1/2 tablespoon stevia working solution, or to taste


Directions:


Combine all ingredients in a large mug and stir well. The cocoa will settle to the bottom if you let it sit, so be sure to stir/swirl it around every once in a while as you’re drinking it.
